Healthy Brownies

A new and healthier take on the classic brownie, with a secret ingredient –

Black Beans: a source of protein, fibre and many vitamins and minerals  (see nutrition panel below)

Another bonus is that this is very allergy friendly – it is free of nuts and dairy, and can be made gluten free with the substitution listed below

Black Bean Brownies

  • Servings: 20 pieces

Ingredients

425g can of black beans, drained and thoroughly rinsed in cold water

2 large eggs

60g cocoa powder

50g caster sugar

40g honey

30g oat bran (or subsititute for ground flax for a gluten free option)

1 tbs sunflower oil

1 tsp vanilla extract

Pinch of salt

Method

  1. Preheat oven to 180°C and line a 16cm square pan with baking paper
  2. Measure all ingredients into the bowl of a food processor
  3. Mix until thoroughly combined and makes a fairly smooth mixture (about 2 minutes), scraping down the sides of the bowl with a spatula once in between

  1. Pour into the prepared tin (making sure to scrape the bowl and get all the mixture out) and flatten with spatula until even

  1. Bake in the oven for 15-18 minutes or until firm to the touch.
